Amazing and Creamy Chicken Salad

Who doesn’t love an amazing chicken salad!?

With so many premade chicken salads at the grocery store and so many restaurant options, homemade chicken salad is one of those recipes that is normally overlooked.

Simple Ingredients

Our recipe uses simple ingredients to create a delicious and easy chicken salad. This tasty chicken salad is also a great way to feed the entire family, meal prep for the busy work week, or bring it to a party as an appetizer or a side dish.

As you can see in most of our posts, we love to meal prep! This is one of our favorite recipes to make, and it can be one of yours as well. It is a classic recipe that is so versatile, healthy, and delicious that everyone will love.

Versatile Dish

A great thing about our chicken salad is all the different ways this simple recipe can be served. The possibilities are endless. It can be used for quick dinners, easy lunches, and as a healthy snack.

  • Add a scoop to your favorite bread with lettuce and tomato for a delicious sandwich.
  • Add a scoop to your favorite wrap, include your favorite cheese, and press for a delicious chicken salad wrap.
  • Serve in lettuce cups, lettuce wraps, or a bed of lettuce or salad greens for more healthy eating.
  • Place a scoop of chicken salad in a small bowl and top with fresh grapes, crisp celery, and carrots for a healthy snack.

Our favorite way to eat this classic chicken salad recipe with any of the suggestions above is with salty potato chips. It gives the chicken salad the right amount of salt and a nice crunch that we love!

Ingredients

All the ingridients needed for the chicken salad recipe.
  • Plain Store-bought Rotisserie Chicken ( We prefer Whole foods naked chicken)
  • Mayo (We like Duke’s)
  • Plain Greek Yogurt (You can use nonfat for a healthier version)
  • Red onion
  • Celery
  • Mt. Olive Kosher Baby Dill Pickles
  • Fresh lemon juice
  • Fresh dill or pickle juice
  • Green onions (optional)
  • Stone-ground Dijon mustard
  • Salt to taste
  • Black pepper to taste

Directions

  1. Place the whole chicken on a cutting board. You can use your hands or a knife and take apart the chicken.

2. Combine chicken, we like to add a little of the dark meat for flavor, but you can only use the white parts for an even healthier version.

3. In a large bowl, you can use a fork or stand mixer to shred the chicken. You can also use the cutting board to shred the chicken.

4. Chop red onion, celery, and pickles. Ideally, the onion/celery/pickle are all in the same ratio.

5. Add onions/celery/pickles to a large bowl with the shredded chicken.

6. Add chopped green onion or scallions. ( optional)

7. Add mayo, greek yogurt, and stone-ground dijon mustard to bowl with chicken.

8. Add lemon juice and dill pickle juice.

9. Mix to combine all ingredients in the bowl.

10. Add a little salt and black pepper to taste.

Store the leftover chicken salad in an airtight container

  • Substitute 1/4 cup Greek yogurt with 1/4 cup sour cream, two chopped-up hard-boiled eggs, and add some bacon bits for a savory chicken salad.
  • Substitiue1/2 cup Mayo with 1/2 cup Miracle Whip for a tangier chicken salad.
  • You can use fresh herbs such as cilantro or parsley as a garnish or to add color.
