Mexican Salsa Pico De Gallo

Fresh Pico de Gallo is a very easy side or appetizer. It is a colorful condiment that adds a fresh flavor to all your favorite Mexican dishes by using fresh ingredients.

Healthy Option

It is also a healthy dip for tortilla chips, a flavorful topping for burrito bowls, and one of our favorite toppings on taco night! It is also a great addition to our chicken quesadilla appetizer. 

Simple and Fresh

Tomato and onions are the main ingredients and most recipes include cilantro, jalapeno, and lime. Other recipes have substitutions such as lemon because it is not as tart as fresh lime juice; garlic to enhance flavor; and red onion instead of white onion or yellow onion.

Spices

We decided to add chipotle seasoning to enhance the flavor of the recipe. Even with the addition of chipotle seasoning, this recipe is for milder salsa. For a spicier salsa, you can add hot peppers or jalapenos. 

Chipotle-Style Pico de Gallo

The chipotle style adds jalapenos for the pico de gallo. Since I have kids I decided not to use jalapenos for this recipe for a more kid-friendly pico.

Plum Tomatoes or Roma Tomatoes

Roma tomatoes are a type of plum tomato. They are used interchangeably in many recipes. They don’t have as many seeds and have a firmer texture. You can use either of these for our Pico de Gallo recipe.

Ingredients

  • Plum tomatoes or Roma tomatoes
  • Red Onion
  • Fresh Cilantro
  • Chipotle
  • Ground Cumin
  • Black Pepper
  • Sea Salt
  • Lemon Juice
  • Olive Oil

Instructions

  1. Cut and chop three large Roma tomatoes into small pieces and spoon them into a medium bowl.

2. Slice the onion in half. Chop about ¼ of the red onion and place in a bowl with the diced tomatoes.

3. Add 1 tablespoon of lemon.

4. Add 1 tablespoon of olive oil (Optional, but its adds flavor).

5. Chop cilantro leaves and cilantro stems and add to a bowl with onions and tomatoes.

6. Add Chipotle and Cumin.

7. Mix to combine all ingredients.

8. Add salt and pepper to taste.

9. Store any leftovers in an airtight container for up 4 days.

Notes

  • If you don’t like cilantro. You can substitute it with parsley.
  • For a chunkier salsa, you can also add green peppers.
  • Use 1 teaspoon of olive oil for less liquid in your pico de gallo.
  • If the pico de gallo has too much liquid you can always put it through a colander before serving.
